Creativity Heals – Kitchen workout

Being creative in the kitchen is one of my ways to get back to reality Trying new recipes and old favourites. Kids got to choose this weekend :

STRAWBERRY JAM (2 ingredients)

  • 1 cup strawberries – fresh or frozen

  • 1 tbsp chia seeds

Mix together in a blender, transfer to a gals jar and let sit overnight in the fridge.

LEMON CURD (4 ingredients)

  • Three eggs

  • 0,75 dl honey

  • zest from 1 lemon

  • Two dl lemon juice fresh

  • 6 tbsp coconut oil

Blend the eggs, honey and zest. But in a pan on low heat. Keep staring. Add and melt the coconut oil and the fresh lemon juice to the pan. Keep stirring until thinking, and small bubbles enter the surface. Set aside and chill overnight.

TRAIL MIX PIECES – In dark chocolate

makes ca 20

  • 1 cup almonds

  • 1 cup cashews

  • 1 cup pumpkin seeds

  • 200g chopped chocolate minimum 70 % cacao

  • 2 tbsp honey

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil

  • 1,5 tsp sea salt from sprinkle

Melt all ingredients in a pan on low heat – then add the nuts and seeds, mix it all, and cover the nuts. Spoon separate small pieces on a baking sheet. Sprinkle a tiny bit of sea salt on top of each trail mix piece. In to the fridge for 30 min. Done, enjoy!
