KETOGENIC Lemon Poppy Muffins

People tend to think just because you are a nutritionist or a health practitioner; you don’t have carvings or have found an ideal fuel plan. Some have, lucky them… I am getting there. Walking the talk is about not giving up, it is to have the courage to get back up after a fall.

Lately, I have tried to cut out fruits – I know – it is healthy and loaded with great phytonutrients, vitamins and minerals. But for me, right now, it was the right decision. If I look at my family disease history (DNA Test) I need to takes beautiful care of my liver ūüôā (we kind of all have to do that but with my genes specifically) The fruit sugar can be a problem when the liver is not in tip-top shape. Does this mean I will cut our fruit forever? NO – I might try some berries back in in a month or two. But this has pushed me to find new recipes like smoothies without fruits or like these little dreamers, Ketogenic Lemon Poopy Muffins, delicious. Enjoy!

  • 3/4 cup Almond flour
  • 1/4 cup Flaxseed flour
  • 1 tsp Baking powder
  • 2 tbsp Poppy seeds
  • 1/4 cup melted butter
  • 1/4 cup Full fat coconut milk
  • 3 Eggs
  • zest of a lemon
  • 1/2 cup Lemon Juice
  • 1 tsp Vanilla extract
  • 25 drops stevia

Preheat oven to 350 c. Combine all the dry ingredients. Melt the butter and add eggs, coconut milk. Combine everything until smooth and add the lemon zest, juice, stevia and vanilla. Mix thoroughly. Spoon into creases or lined muffin pan, into the oven it goes for approx 20 min.

Let cool before serving!
