A Healthy Slice Of Life…

Life should not be focused on limitations – what we can not have or what we should not do! Focus on the good stuff – the positive side of things – what you already have or what you would like to have in the future.

Giving up your traditional slice of bread can be emotional, I know… Be creative and look at what you gain from choosing a better alternative for your body and mind. This week I have had clients with the same need for a low GI and gluten-free bread. So I thought I would share my two favourites. Still that lovely smell of freshly baked bread in the house, easy and quick to make! Good for both your body and mind.

Almond Base Loaf

  • 1 3/4 cup almond flour
  • 2 tbsp coconut flour
  • 0,5 cup sesame seeds
  • 0,5 cup psyllium husk
  • 1 tbsp baking powder
  • 0,5 tsp sea salt
  • 6 eggs
  • 1 1/4 cups coconut milk
  • 0,5 cups coconut oil

Grease a pan with some extra coconut oil and sesame seeds and some extra sesame seeds to sprinkle on top.

Put the oven on 200c. Melt the coconut oil. Mix all the dry ingredients.

Mix the eggs, coconut oil and coconut milk well and then the egg mixture with the dry ingredients. Let it all sit for 5 min. Scoop the doe into the pan, making sure there are no air pockets by pressing it gently down—even it out with a wet spoon. Sprinkle the sesame seed on top. Put in the oven for 45 minutes. When done, let the bread sit for 5 minutes and then take it out of the pan and leave it under a kitchen towel until cold.

Coconut Base Loaf

  • 5 eggs
  • 50 g coconut oil
  • 0,5 cup coconut flour
  • 1 tbsp psyllium husk
  • 1 tsp baking powder
  • 0,5 tsp sea salt
  • 1 tsp black sesame seeds for topping

Blend the eggs, thick and foamy. Melt the coconut oil. Mix the dry ingredients in a bowl. Grease a loaf pan with some of the melted coconut oil and cover sides with seeds. Mix the flour with the eggs and pour in the melted oil. Mix well and put the mixture in the pan, sprinkle some seeds for topping. In the oven,175° for 25 minutes. Let cool before cutting. Enjoy!
